Where Sitka Spruce has a wide dynamic range, Western Red Cedar is a softer wood and so it picks up soft nuances that no other wood quite delivers. That said, heavier strumming can overwhelm a guitar with a Western Red Cedar top. Because of this it is best for players with a soft touch and fingerstyle players.
